This week, we had the great pleasure and privilege of a visit by Sebastián La Rocca, culinary director for the Enjoy Group’s exclusive Costa Rican resorts and restaurants.  Sebastián was born in Argentina; trained in New York, and was head chef at some top Michelin star restaurants, including Jamie Oliver’s Barbacoa in London.

Sebastián, as we discovered, is absolutely passionate about food … and that is especially true of beef.  He had heard about our artisan beef program, and wanted a first-hand look at our dry-aging facility.

What followed was a fun and informative afternoon of grilling Skirt Steak, Porterhouse, and a Ribeye.  Sebastián shared some cooking tips, and listened patiently to our story and our philosophy for producing artisan beef.

I think Sebastián left with a favorable impression of our operation.  And we hope to further develop a friendship and collaboration with him in the future.
