Whole-shank Ossobuco


.        Ossobuco is the classic Milanese dish of beef shanks braised in vegetables, wine, and beef stock.  “Osso Buco” is Italian for “bone with a hole,” which refers to the cross-cut bone with marrow in the center.

.        Most butchers cut Ossobuco in 1-inch thick pieces.  But taking inspiration from one of North America’s most respected butchers — Pat La Frieda — we’ve cut the entire shank in one pice.  This is a very large cut of beef that requires a good sized slow cooker or Dutch oven … as well as a healthy appetite for a group of family or friends.  This is a dish to serve when you want to make an impression.  10,000/kg .            (Photo credit:  Pat La Frieda)
