Cowboy Steak


.       The Cowboy Steak is a thick-cut Ribeye (or Delmonico) with the Ribeye Cap and a short length of rib bone attached.  The bone was traditionally used has a handle by Cowboys eating around the camp fire.  This robust steak is generously marbled, very juicy and exceptionally tender.  We have dry aged our Cowboy steaks for 45 days.  The dry aging process not only allows for complete enzymatic tenderization to take place, but also allows the steak to lose some moisture, which concentrates the beef flavor. 24,000/kg
