Boomerang Steak (more on April 15)
Our team of very experienced butchers just extracted a cut of beef with some extraordinary properties. It is remarkably tender, full of flavor, and can be cooked/served many different ways. We are still trying to determine if anyone else has already “discovered” this cut of beef. We might be the first!!
We are tentatively calling it the Boomerang Steak, due to its slightly curved shape. It comes from deep within the chuck, near the blade bone. It is relatively lean, yet still very tender for a muscle in this area. The flavor is very similar to the Flat Iron. And I would personally rate it just as good as, if not better than, both the Denver Steak and Vegas Strip Steak.
This is all very new and I unfortunately don’t have a good picture of it yet. Our butchers ate the first one before I could get pics, and I didn’t want to take another one out of inventory just for pictures. (There are only 2 per animal.) . So I am using a placeholder photo for now. As soon as we cut more, I will be sure to circulate some photographs. 18,000 / kg
