The Vegas Strip Steak is the newest cut to take the top steakhouse restaurants by storm. It was “discovered” by the same team of researchers who gave us the Flat Iron. In fact, the Vegas Strip comes from a muscle group right next to the Flat Iron. Some people actually describe the Vegas Strip as the “little brother” to the Flat Iron. Tenderness and flavor in both are outstanding. One key difference, however, is that the Vegas Strip Steak does not have the layer of tough connective tissue found in the Flat Iron.
